Puebla’s Chile en Nogada Season Set to Serve 3 Million Plates in 2026

Puebla is gearing up for a vibrant culinary season in 2026, with the National Chamber of the Restaurant and Seasoned Food Industry (Canirac) estimating that around 3 million chiles en nogada will be served across the state. This iconic dish continues to be a powerful driver of both gastronomy and tourism in the region.

One of the highlights will be the traditional Chile en Nogada meal scheduled for July 23 at the historic ex-Hacienda de San José Actipan in San Andrés Cholula. The event will feature 32 affiliated restaurants, including well-known names like Augurio, Intro, La Noria, Royalty, and El Mural de los Poblanos, among others. Tickets are priced at 1,650 pesos per person, with a discounted rate of 1,550 pesos for members of business organizations.

Juan José Sánchez Martínez, president of Canirac Puebla, emphasized the importance of supporting local agriculture this year. The chamber plans to collaborate with the Secretariat of Rural Development to promote fair pricing and encourage the use of Puebla-grown poblano chiles, despite competition from other states such as Zacatecas. This focus on local sourcing not only strengthens the regional economy but also preserves the authenticity of the dish.

The event will also showcase beverages and digestives from companies like Bodegas Santo Tomás, Mezcal Alegría, Prissa, and Grupo Modelo, enhancing the overall gastronomic experience.

Beyond the festival, Puebla’s restaurant sector is a significant economic force, with over 40,000 establishments statewide contributing to local supply chains and job creation. In a strategic move to elevate Puebla’s culinary reputation, the Coordinating Business Council (CCE) is pushing for the state’s inclusion in the prestigious Michelin Guide. This recognition could boost the entire tourism and gastronomy industry, benefiting not only the selected restaurants but the broader community.

As Puebla embraces its rich culinary heritage and supports sustainable local production, initiatives like these highlight the potential of food culture to drive social and economic progress in the region.
